One of Farmer Dan's favorite steaks. Very flavorful steak cut and best cooked medium-rare and sliced.
Keep frozen for up to 1 year. Thaw in the fridge for 24–48 hours, or quick-thaw in a bowl of cold water for 2–3 hours. Once thawed, use within 2–3 days.

Description of Cut: This is one of my favorite steaks. There is only one per cow. It is on the inside of the cow, and needs to get taken out while dressing. Make sure you ask your butcher for it, or it will get thrown away or put into grind.
