Keep frozen for up to 1 year. Thaw in the fridge for 24–48 hours, or quick-thaw in a bowl of cold water for 2–3 hours. Once thawed, use within 2–3 days.

The New York Strip (AKA "short loin") is taken out of the loin and is similar to the Delmonico. Also a higher priced and more tender cut. If left bone-in, it will be a T-Bone steak and will have part of the tenderloin within it. This cut is boneless.
