Einkorn is the oldest variety of wheat still grown today... closely related to modern wheat, but genetically much simpler. That simpler structure gives it a deeper, nuttier flavor than what you're used to, along with a lower gluten content. Many people who find modern wheat hard on their stomach are surprised by how well they tolerate einkorn.
This bread is made using traditional sourdough fermentation, just like all our bread. The dough is given time to slowly ferment before baking. It's a process that develops real flavor and naturally breaks down some of the compounds in grain that make modern bread harder to digest.
This bread is frozen when fresh to preserve quality. It arrives frozen and can be kept in your freezer until you're ready to use it.
To enjoy, thaw on the counter. Once thawed, store in a sealed bag and use within several days.
