Colorant Free = Varying Yolk Colors

We don't add any colorants to the feed (even natural ones like marigold and paprika). This means that the yolk color will naturally change with the seasons and the weather. 

The more the hens are foraging at pasture, the darker the yolks. In the winter, when the pasture isn't growing, the yolks will likely be yellow. In the summer, when hens are constantly foraging, they'll likely be darker yellow or orange. 

This is the true meaning of "pasture raised". If you're getting pasture raised eggs with orange yolks all year, things may not be as you think... if there's colorant in the feed.

Storage & Shelf Life

Our unwashed eggs can be stored on the counter or in the fridge. They should last about 3-4 weeks on the counter and 12 weeks (or more) in the fridge.

Creative Uses

  • Make your own mayo by emulsifying egg yolks with oil and lemon. 
  • Bake eggs in tomato halves.
  • Make shakshuka by poaching eggs in a spiced tomato sauce.
  • Make eggs in a basket (AKA toad in a hole) by frying an egg in a hole cut in bread.
  • Since our eggs are unwashed, you can water glass them for longterm storage at room temp. Submerge your eggs in a solution of pickling lime and water (about 1oz of lime per quart of water) in a sealed container (like a mason jar). This seals the eggs' pores, preserving them for later use.
