What Are Pullet Eggs?

Pullet eggs are the very first eggs laid by young female chickens when they reach maturity, typically between 16 and 24 weeks of age. Because the hens are young and their bodies are just beginning to produce eggs, these eggs come out smaller than a standard egg. But smaller doesn't mean lesser. 

Pullet eggs have a higher yolk-to-white ratio than a mature hen's egg, which translates directly to richer flavor and a creamier, more velvety texture. Many people consider them the finest eggs a hen will ever lay. As the hens mature, the eggs grow to full size. That means pullet eggs are only available for a short window (and are therefore excluded from subscriptions). Once they're gone, they're gone until the next young flock comes online.

What do the hens eat?

Our hens are pasture raised. That means they have plenty to forage for in the warmer months and are mostly indoors in the colder months. We always provide them a special, chemical-free feed. It's a blend of peas, triticale, alfalfa pellets, fishmeal, flaxseed meal, beef fat, vitamins, and minerals.

Colorant Free = Varying Yolk Colors

We don't add any colorants to the feed (even natural ones like marigold and paprika). This means that the yolk color will naturally change with the seasons and the weather. 

The more the hens are foraging at pasture, the darker the yolks. In the winter, when the pasture isn't growing, the yolks will likely be yellow. In the summer, when hens are constantly foraging, they'll likely be darker yellow or orange. 

This is the true meaning of "pasture raised". If you're getting pasture raised eggs with orange yolks all year, things may not be as you think... if there's colorant in the feed.

Storage & Shelf Life

Our unwashed eggs can be stored on the counter or in the fridge. They should last about 3-4 weeks on the counter and 12 weeks (or more) in the fridge.
