Sharp cheddar gets its bold, tangy flavor from extended aging. The longer it ages, the more complex and pronounced the flavor becomes — firmer in texture, richer in taste, and unmistakably different from its mild counterpart. If you've only ever had mild cheddar, this is a different experience entirely.
Should last 4-6 months in the fridge unopened. Once opened, keep covered or in a container (like a ziplock bag, wrapped in parchment paper, or a glass Pyrex).
You can freeze cheese for up to a year. But it may have a more crumbly texture when thawed.
