Classic chocolate chip cookies, made with einkorn flour and grass-fed butter. Keep dry ingredients in quart-sized mason jars in the pantry so freshly baked cookies are always at the ready, or layer and attach a handwritten recipe for a thoughtful homemade gift.
- Servings: 1 Jar
Ingredients
- (1 3/4 Cup) Einkorn Flour, 8 lb
- (1/2 Cup, Packed) Light Brown Sugar
- (1/4 Cup) Granulated Sugar
- (3/4 Cup) Semi-Sweet Chocolate Chips
- (1/2 Tsp) Baking Soda
- (1/2 Tsp) Salt
Directions
Assemble The Jar:
- In a bowl, whisk together Einkorn flour, baking soda, and salt.
- Spoon into a clean, dry quart-sized mason jar. Gently tap the jar on the counter to settle the flour into an even layer.
- Add brown sugar and press gently into an even layer.
- Layer granulated sugar.
- Add chocolate chips on tip. Seal the jar tightly and add written instructions on a label or small card.
To Add When Baking:
½ cup softened unsalted raw butter
1 large egg
1 tsp vanilla extract
To Bake:
- In a large bowl, beat butter, egg, and vanilla extract together until smooth.
- Add the contents of the jar and mix until just combined into a dough. Einkorn flour doesn’t do well with over-mixing, so be gentle with it.
- Cover and chill the dough in the refrigerator for 1-2 hours.
- Preheat oven to 350*F and line a baking tray with parchment paper.
- Scoop rounded tablespoons of dough onto the tray spaced 2 inches apart.
- Bake 10-12 minutes, until the edges are lightly golden and the centers are set.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
