Ingredients
- (4 leg quarters) Chicken Legs & Thighs
- (2 Tablespoons) Raw Salted Butter, 1 lb
- (1 teaspoon) Salt
- (1/2 teaspoon) Black pepper
- (1/2 teaspoon) Garlic powder
- (1) Large onion, sliced
- (4-6) Medium potatoes, quartered
- (1/2 cup) Chicken Broth, 1 quart
Directions
- Preheat oven to 375°F.
- Season the chicken leg quarters on both sides with salt, pepper, and garlic powder.
- Heat butter in a large cast iron skillet over medium heat. Brown the chicken on both sides until golden, about 5 minutes per side.
- Add sliced onions and quartered potatoes around the chicken in the skillet. Pour in the broth (or water).
- Cover the skillet with a lid or foil and transfer to the oven.
- Roast for 45-50 minutes until the chicken is cooked through (internal temperature of 165°F) and the potatoes are tender.
- Serve straight from the skillet. The drippings make a simple gravy. Spoon it over everything!
